Elaboration (Vinification)
Made with Pedro Ximénez grape variety from the north of Malaga. We carry out the late manual harvest to obtain a high degree of reducing sugars and their subsequent sun exposure by direct exposure to the sun for 15 days.
Subsequently, a careful selection of grapes is carried out and their subsequent de-stemming to obtain musts of great quality and high concentration of sugars. Once made, we proceed to oxidative aging in American oak casks for more than 24 months. High quality wine.
Pairing
Ideal wine for aperitif or as a dessert. It pairs very well with foie, strong and cured cheeses, nuts.
