Elaboration (Winification) Finca Ernite

Finca Ernite 2021 is a red Oak with Denomination of Origin Sierras de Málaga. It is made with the Tempranillo grape variety from vineyards in the Serranía de Ronda that are located at an altitude of 700 meters in the province of Malaga.

We make this Finca Ernite oak red wine, harvesting manually at dawn to avoid oxidation of the grapes. When the grape is sufficiently ripe and, consequently, there is a high concentration of sugars, the skin is ripe (polyphenol and aromatic ripeness), as well as the seeds, it is harvested.

When the grapes are received at the winery, a prior selection is made at the reception table to discard those that do not meet the high quality standards in the winery. Subsequently, destemming is carried out to eliminate the scratches on the bunches. Then it goes to a 100Hl stainless steel tank where it will carry out alcoholic fermentation. Once in the fermentation tank, and for several days, pre-fermentation maceration is carried out to extract the color of the skin at a temperature of 16ºC and obtain a fantastic Finca Ernite oak red wine.

Once the alcoholic fermentation with selected yeasts has begun, the fermentation temperature is controlled at all times between 22ºC and 25ºC. When the alcoholic fermentation is finished, and after several days of punching, we proceed to its subsequent bleeding to then carry out the malolactic fermentation. Once the latter is finished, we proceed to its clarification and stabilization. Subsequently, it undergoes oxidative aging in 225-liter French and American oak barrels for 5 months and 17 days.

Lastly, the winery's technical team determines the optimum moment for Finca Ernite when it is aged in the barrels, before bottling, to finish its refinement with a further 7-month aging in the bottle.

Pairing

Finca Ernite, the oak red from Bodegas Quitapenas, is perfect to accompany with cheeses or cold cuts. Meat stews, roasted or grilled meats. Meat rice and pasta. Tapas or informal meals. And if you want to be daring, try it, with a chocolate cocoa to quality 85%. Decanting is recommended before consumption.
