Elaboration (Vinification)
Bibir is a very special wine, made with sun-dried grapes of the Moscatel Morisco variety from the northern area of Malaga and from organic farming.
Maximum quality from the very beginning of the process results in this very special wine. Bibir is a naturally sweet, organic wine made using traditional methods with minimal intervention to preserve all the wonderful characteristics of this Muscat grape variety.
The yeasts selected for this wine fermented for 20 days at a controlled temperature. Traditional clarification treatments were used to further preserve its characteristics. It then rested in French oak and acacia barrels for 12 months, which imparted the finesse and balance that make it so special.
A true oenological gem.
Pairing
Bibir organic wine pairs perfectly with goat cheeses, soft blue cheeses, pâtés, fresh fruit salads, Asian cuisine (Japanese or Thai) with sweet or spicy notes, baked cheesecake, ice cream, fruit tarts, but above all, the best pairing is to enjoy it with good company.
